If you would have told me 15 years ago that I would enjoy curry as much as I do today, I would have told you that you were crazy. In fact, I only had my first experience with this fragrant and pungent spice 13 years ago. Luckily, my tastes evolved quickly and I grew to love curries of all kinds… Indian curry, Thai curry, Filipino curry… you name it, I love it!
What puts curry on my “I-could-eat-this-every-day” list is the meat. Don’t get me wrong, I appreciate a completely vegetarian curry made with chickpeas, sweet potatoes or lentils, but what I really look forward to is succulent, flavour-packed meats like pork, chicken, or beef.
And THIS curry delivers! A large pork picnic roast is seared and then slowly simmered in a rich and easy to prepare coconut curry sauce. The pork comes out perfectly tender, infused with the aromatic curry! Oh yeah, I could easily eat this every day!
Easy Pork Curry
While this curry cannot be prepared in a hurry, it’s well worth the wait! Pantry staples make up the easy curry base, while an inexpensive pork picnic roast adds substance. The amount of curry can be adjusted based on your family’s tastes.
